Baked Apple Bites Recipe

When Toddler Smith says, "appa," he means these apple bites. He can't get enough of them! In the past, Toddler Smith refused to eat the apple peel so we had to peel them first. We forgot this time, but luckily he doesn't seem to mind. They make a nice addition to a grilled cheese or on top of yogurt. We found the recipe in The Big Book of Organic Baby Food.

Baked Apple Bites

Ingredients:

1/4 cup flaxseed

1/4 teaspoon ground cinnamon

pinch ground ginger

1 apple, peeled, cored, and cut into 1/2-inch pieces

1 egg, beaten

Directions:

1. Preheat the oven to 375 F. Line a baking sheet with parchment.

2. In blender or food processor, process the flaxseed, cinnamon, and ginger to make a powder. Transfer the powder to a small bowl.

3. Dip the pieces of apples into the egg, and then coat each piece of all sides with flaxseed powder.

4. Arrange the pieces of the prepared baking sheet and bake until the apples are soft, 20 to 25 minutes.
