Cinco de Mayo Dinner Party Recipes, Part 1 – Chicken Fajitas

When friends come over for dinner, instead of having the meal already prepared for them, we enjoy cooking together with them. For our recent Mexican night, our friends Melanie and Dennis came over to learn how to make homemade flour tortillas.

We love Mexican food night because, well, we love Mexican food and because it comes together so easily for guests. With Mexican food, you can opt to cook or purchase more or less. Based on how much time we have that week, we might make our own salsa, beans, etc.; or, we may just pick them up from our local Mexican supermarket.

Before our friends arrived, we had to prepare the fajitas. The chicken fajitas should marinate the night before. Then they cook quickly just before dinner is served and make the house smell amazing!
